At Viking Farms TN we are firstly responsible for embodying and driving our mission of "Improve our community and our soil, every single day." We do this through regenerative practices, humane animal husbandry, deliberate biodiversity, and community engagement and education.
After years of navigating autoimmune illness, Ashley Sorensen began searching for ways to feel better. She started asking simple but persistent questions: how food affects inflammation, how animals are raised, and whether greater care and transparency could lead to better health.
That search led the Sorensen family to purchase Viking Farms in 2021.
What began as a deeply personal health journey quickly became something much bigger. The family wanted to know exactly what went into their food — how their animals were raised, what they were fed, and how they were cared for — in pursuit of a cleaner, more intentional way of eating.
But Ashley wasn’t always a farmer.
She began her career as an Army Officer, commissioned from the United States Military Academy at West Point in 2010. As an Explosive Ordnance Disposal (EOD) Officer, she served more than eight years leading soldiers in one of the Army’s most demanding fields. During that time, she was also recognized as a gifted athlete, breaking a Guinness World Record for running a mile in the EOD bomb suit and competing as a nationally recognized rugby player.
After transitioning from military service, Ashley moved from bombs to bonds, spending over seven years in finance, including five as a Portfolio Manager at JPMorgan. Over time, however, her focus shifted. What started as a desire to improve her own health grew into a calling to build something tangible, sustainable, and life-giving.
Today, that same discipline, resilience, and commitment to excellence shape everything at Viking Farms. We raise humanely managed chickens, pork, and cattle using thoughtful nutrition and pasture-based practices, producing food we are proud to serve our own family.

Our grass-foraged cattle thrive on carefully managed premium pasture, resulting in healthier cows and heavier, structurally sound calves. Superior forage translates into stronger maternal performance and feeder calves with the frame, muscle, and efficiency buyers look for. We market premium Angus and Hereford cross feeder cattle throughout Virginia and Tennessee, offering genetics and management that stand out in today’s competitive market.


Experience the difference of truly pasture-raised chicken. Our birds are humanely raised in mobile coops that move throughout the day, giving them constant access to fresh pasture and sunshine. Combined with high-quality organic feed and attentive care, this natural approach creates superior taste — and food you can feel good about serving your family.

Happy hens lay better eggs — and it shows. Our chickens roam freely across multiple acres, with wooded cover for shade and protection. They’re free to explore (sometimes wandering a little closer to the house than planned!) and are fed only the highest-quality organic feed. The result? Rich, dark golden yolks, exceptional flavor, and hens that truly thrive. Taste the difference that thoughtful, humane farming makes.
Our organically raised Kunekune pigs are small, friendly, and thrive on pasture. This forage-first breed is well-suited for homesteads and makes a wonderful addition to small farms — or even as unique pets. Our boar, “Hairy Hogdini,” has personality to spare and can even sit on cue! As a heritage lard breed, Kunekunes are prized for their beautifully marbled pork, producing outstanding bacon and sausage.
